Melt 1tbps butter into a large pot.
Sauté 2 stalks chopped celery, 1 chopped onion and 1 chopped carrot for some flavour.
Add 1 bay leaf and or/ dill and 2 chopped potatoes.

Stir in 2 cups of fish stock or water and bring to a boil. Reduce heat and boil until potatoes are almost tender.

Add 2 cups of milk and whisk in 1/4 cup of flour. Simmer and stir often.

Add chowder pack and simmer until fish is opaque and flakes easily with a fork. Discard bay leaf.

Add juice from 1/2 lemon and season with salt and pepper.

Pro tip: Add in corn, crab meat or lobster meat.
